Ingredients

  • 4 1/4 Cup All-purpose flour
  • 1 tsp salt
  • 1 tsp baking Powder
  • 2 sticks Unsalted Butter 1 cup
  • 1 3/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1/4 tsp almond extract
  • 2 eggs
  • 1 cup rainbow sprinkles

Instructions

  • Preheat oven to 325 degrees F.
  • Take butter and egg out of the refrigerator for about 10-15 minutes to warm a little.
  • In a medium bowl combine flour, salt, and baking powder, whisk and set aside.
  • In a large mixer bowl add butter and sugar and blend on medium speed until light and fluffy.
  • Add vanilla, almond, and eggs one a time mixing on medium speed.
  • Add flour mixture in thirds and mix on medium speed until combined well and you have a soft dough.
  • Lastly, add rainbow sprinkles and mix to incorporate evenly into the dough.
  • Wrap dough in plastic wrap or parchment paper and chill.
  • Once the dough is chilled all the way through roll-out and shape. Chill the shaped dough for at least 10 minutes before baking.
  • Bake on lined cookie sheet for 11-13 minutes or until the edges are slightly golden and the tops are set.
  • Once done, remove the cookies from the oven and let them cool on the cookie sheet for a few more minutes. This will allow the cookies to continue to bake while cooling.
