This recipe for onion dip uses caramelized red onions and shallots with a hint of blue cheese. I came up with this recipe to try to make a dipping sauce for a buffalo chicken recipe. Blue cheese is NOT my favorite, so I made an onion dip base and added a touch of blue cheese. The red onions and shallots give a sweet flavor that is balanced with the cheeses and a dash of rosemary.
This versatile onion dip can be served with almost anything making it perfect for game day or any gathering. It is best to make this dip ahead of time and let sit in the refrigerator for a few hours to let the flavors mingle together. Anything that is easy to make and can be prepared ahead of time makes it perfect for entertaining.

Description
An onion dip using caramelized onions and shallots with a hint of blue cheese and rosemary.
Ingredients
- 1 red onion finely diced
- 3 shallots finely diced
- 2 tbsp butter
- 1 tsp salt
- 1 tbsp rosemary
- 2 tsp blue cheese crumbles.
Instructions
- In a medium skillet heat 1 tbsp of butter and diced red onion and one diced shallot for about 10-15 minutes on medium heat. Once they are caramelized remove form heat and set aside in a bowl. In same skillet heat the remaining butter and two diced shallots on medium heat for about 10-15 minutes until caramelized and set aside for topping.
- In a medium bowl mix cream cheese and sour cream until smooth, add fresh chopped rosemary leaves, salt, Onion mixture and cheese crumbles and mix well. Top with remaining caramelized shallots, cover and refrigerate until serving.
Notes
Letting the cream cheese sit out for a few minutes to bring to room temperature will help it blend smoother.
